The creamiest, most flavorful dairy free pasta sauce.
I feel like I say that every time I make a new pasta sauce recipe... but really- this one is SO delicious. This goes great with zucchini noodles or your favorite pasta, as well as meatballs or your favorite plant-based protein.
- 1/2 cup raw cashews
- 1/2 cup water
- juice of 1 large lemon
- 2 tbsp extra-virgin olive oil
- handful of fresh basil (dried will not work!)
- 1 garlic glove
- 1/2 tsp sea salt
- black pepper, to taste
- Blend all ingredients in a high speed blender on high until smooth. (you'll need a powerful blender for this to work). Optional: add more water if a thinner sauce is desired
- Taste sauce and adjust seasonings. Serve, or store in an airtight container in the refrigerator for up to 5 days.
