simple sweet potato flax pancakes (paleo).

my fall/winter breakfast obsession.

these pancakes couldn’t be more simple. made with only wholesome, real ingredients and completely unsweetened (although, you can add a little sweetener if you’re in the mood!)

these pancakes + some melted butter and I am in heaven!

you can also sub pumpkin puree if that’s what you have around :)

simple sweet potato flax pancakes (paleo).

Ingredients

Serves 2

  • 4 eggs 

  • 1 sweet potato, steamed or baked (or sub 1/2 cup pumpkin puree)

  • 2 tbsp flax seed 

  • 2-3 tsp cinnamon 

  • optional: 1 scoop of vanilla or unflavored protein powder

    1. Blend all ingredients on high until well combined.
    2. Cook on a skillet greased with butter, ghee, or coconut oil. Once pancakes are bubbly, gently flip. Cook on other side for 2 minutes. ** note these pancakes are not sweetened. If you would like, add a little maple syrup or coconut sugar to the mix.
