this salad is nutrient-dense + easy to whip up for a quick weeknight dinner. i absolutely love this with my go-to crispy salmon! the salmon isn’t an exact recipe- but i do have a highlight on my instagram page. i pan sear my salmon with coconut aminos, sesame oil, and avocado oil with some seasonings for a perfectly crispy and juicy salmon every time! be sure to check might highlight on my instagram page for a step-by-step.

recipe

serves 1-2

ingredients

  • 2 baby cucumbers, thinly sliced 

  • 1 tbsp rice vinegar 

  • 1/2 tbsp sesame oil 

  • 1 tsp soy sauce or coconut aminos 

  • 1 tsp coconut sugar 

  • 1/4 tsp sea salt 

  • 1 tbsp crushed peanuts or cashews 

  • red pepper flakes, to taste 

  • optional: sesame seeds, green onion for garnish

  1. combine all sauce ingredients besides crushed nuts, then stir in cucumbers. 

  2. top with crushed peanuts or cashews, garnish with sesame seeds and green onion (optional).
