crunchy, refreshing, simple cucumber salad.

2 baby cucumbers, thinly sliced
1 tbsp rice vinegar
1/2 tbsp sesame oil
1 tsp soy sauce or coconut aminos
1 tsp coconut sugar
1/4 tsp sea salt
1 tbsp crushed peanuts or cashews
red pepper flakes, to taste
optional: sesame seeds, green onion for garnish
combine all sauce ingredients besides crushed nuts, then stir in cucumbers.
top with crushed peanuts or cashews, garnish with sesame seeds and green onion (optional).
