i made this recipe on a whim with some things i had on hand (and almost always have on hand) when i had a major pancake craving. they are super thick and fluffy, and so easy to make. you can whisk them by hand or toss them in a blender.

nut free + grain free. easy clean up, easy to devour.

recipe

serves 1

ingredients

  • 1 banana, mashed

  • 2 eggs

  • 3 tbsp coconut flour

  • 2 tbsp coconut or almond milk

  • 1 tsp cinnamon

  • 1/2 tsp baking soda

  • dash of vanilla

  • pinch of sea salt

    1. whisk mashed banana with eggs, vanilla, and cinnamon. whisk in remaining ingredients until smooth. (alternatively, you can place all ingredients in a blender until smooth)
    2. cook over medium heat in coconut oil or ghee on a skillet, a few minutes per side watching so that they don’t burn. optional: cover pan with a lid to help fluff up. if the batter sprays out a little when you flip, don’t worry! just use the spatula to push the batter back into a circle.
    3. serve with maple syrup and your favorite fruit or flax/hemp seeds.
