simple spring asparagus parmesan pasta (gluten free).
i love a good, fresh spring pasta dish to get me excited about the seasonal produce!
this dish was made in partnership with Bertolli olive oil, using their high quality organic olive which gives this dish amazing flavor. this pasta is so simple to make and so delicious. you can’t really go wrong with parm + asparagus, right?
i love using a high quality olive oil in my dishes for those healthy omega 3’s! i’m always adding healthy fats to my meals, and olive oil is one of my favorites to use. healthy fats help slow the absorption of carbohydrates to maintain healthy blood sugar levels, and they also have tons of anti-inflammatory properties to fight against diseases. gone are the days of low fat foods my people!
this is great for meal prep, and easy weeknight dinner or sunday family pasta, or to make for a crowd! you guys know my love for pasta runs deep. it connects me to my roots, it’s so satisfying, and it’s the ultimate comfort food. plus, you can always load pasta with as many veggies as you want.
1 8-oz box of pasta of choice
1 bunch of asparagus, cut into 1" pieces
1/2 cup grated parmesan cheese
2 1/5 tbsp @bertolli_us olive oil, divided
2 cloves of garlic, minced
juice of 1 lemon
1 tsp italian seasoning
1. cook pasta according to directions on box. while pasta is cooking, heat a large skillet with 1 tbsp of olive oil. once hot, add garlic until fragrant, about 30 seconds, then add asparagus pieces.
2. add italian seasoning, 1/4 tsp salt, and a few cracks of black pepper. stir to coat, and cook for 10-12 minutes (i like to use the skinny stalks here- if using thicker asparagus pieces times will vary).
3. when pasta is done cooking, stir in juice of lemon, 1.5 tbsp olive oil, parmesan, and salt + pepper (adjust until desired taste). stir in asparagus and serve.
