pancakes are definitely my favorite sweet breakfast- you can make them with simple and healthy ingredients while still feeling like such a treat in the morning! best way to start the day.

two ways i’m loving these pancakes:

  • topped with creamy blackberry or blueberry yogurt, juicy berries, and maple syrup

  • sliced banana, peanut butter, hemp seeds, and maple syrup

these pancakes are made with flahavan’s irish rolled out. they are naturally creamy, sustainable oats that gives these the best flavor and texture. flahavan’s recently launched new packaging in the usa to represent their values in supporting local irish oat farmers. they are a company run on family business values and sustainable resourcing- i love supporting a company like that!

i am so happy i was able to nail down a vegan pancake recipe for you all! i love a blender pancake recipe- easy clean up and prep time is what i’m all about! these are so delicious, i know you guys will love them!

serves 1-2

ingredients

  • 1 cup of @flahavans irish rolled oats

  • 1 ripe banana

  • 1/2 cup dairy free milk of choice

  • 2 tbsp coconut sugar

  • 1 tbsp chia seeds

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • pinch of sea salt

  • few sprinkles of cinnamon

instructions

  1. add all ingredients to blender until smooth.

  2. cook on a non stick skillet greased with coconut oil, butter, or ghee over medium heat. cook each side for 2-3 minutes, or until golden brown. serve with fruit, yogurt, nut butter, and/or maple syrup.
