grain free honey biscuits + cinnamon honey butter (paleo, gluten free).
is there anything better than starting your morning with a pastry and coffee? i think it’s one of my top favorite things to do in life. i don’t know why…it’s just cozy, comforting, and special. i love mornings so much- both on the weekend and during the week! during the week, it’s a way to do something for myself to start my day on the right foot, and on the weekends it’s a time for me to slow down and soak in life.
these honey biscuits are grain free, but you seriously would never know. the texture is everything, and so is the flavor. plus, the homemade cinnamon honey butter! don’t even get me started.
these biscuits with a smear of the cinnamon honey butter taste like a brown sugar cinnamon pop-tart! i swear. try it and let me know if you agree!
the best part is how easy these are to make! the batter takes a few minutes, so it’s easy to take a couple extra minutes to mold them with your hands to get that perfectly round biscuit shape. i set the oven, prep the batter. and basically the minute i’m done getting them on the pan the oven is ready to go!
this will be your new favorite weekend morning treat- i swear.
makes 7-8 biscuits
for the biscuits:
2 cups of almond flour
2 eggs, whisked
1/3 cup butter, melted and cooled
2 tbsp honey
2 tsp baking powder
1 tsp cinnamon
1/2 tsp sea salt
for the cinnamon honey butter:
1/3 cup of butter, at room temperature
1 tbsp honey
1 tso cinnamon
preheat oven to 350°F. line a baking sheet with parchment paper.
whisk egg with butter and honey, then stir in all other ingredients until well combined.
once well combined, scoop out biscuits onto parchment paper, making 7-8 biscuits (i like to use a cookie scoop for this).
slightly flatten the biscuits to about 1/2" thickness, then use fingers to gently shape into round biscuits.
bake for 15 minutes. while biscuits are baking, use a hand mixer to combine all of the honey butter ingredients.
allow biscuits to cool before carefully slicing the biscuits in half before serving with cinnamon honey butter. if you don’t make the butter, i recommend serving the biscuits with regular butter and a good drizzle of honey and sprinkle of cinnamon!
