this cookie cake is fluffy, buttery, flavorful, and addicting. put a warmed up piece in front of me with a glass of almond milk and i’m a happy chick!

the ingredients are pure and simple. the browned butter is an extra (easy) step that takes this to the next level— browned butter creates a rich, decadent, delicious flavor. i love it so much in desserts! browning the butter is super easy, and totally worth it. i added in some chopped pecans because nut+butter are a duo i’ll never quit, but you can totally leave them out and just keep this a simple browned butter chocolate chip cookie cake.

the main components to this recipe are simple:

  • butter (preferably grass fed)

  • almond flour

  • an egg

  • pure maple syrup

the texture is out of this world! i am constantly using baked treats as an excuse to let out some creativity in the kitchen and experiment. it’s such a release for me! my mind totally shuts off and i am calm. i love it so much. anyone else like this?

this cookie cake is free of refined sugars, grains, and gluten. but still has all the flavor and satisfaction for my sweet tooth! next time i make this, i am totally scooping some ice cream on top!

recipe

makes 16 servings

ingredients

  • 2 cups almond flour

  • 1/2 cup unsalted butter

  • 1/2 cup pure maple syrup

  • 1 egg

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 1/2 tsp sea salt

  • 1/4 cup chocolate chips

  • 3 tbsp chopped pecans (optional)

instructions

  1. preheat oven to 325°F. while oven is heating, brown the butter. do so by adding all of the butter to a nonstick pan over medium low heat, and allow to heat until light brown in color, 4-5 minutes. set aside to cool.

  2. while butter is cooling, lightly grease a pie dish with avocado oil, coconut oil, or butter.

  3. in a large bowl, whisk egg with vanilla and maple syrup. pour in butter (make sure it has mostly cooled), then stir in remaining ingredients.

  4. use a rubber spatula to scoop the batter into the pie die and smooth it out so that it is evenly spread and smooth on top.

  5. bake for 16-18 minutes, allow to completely cool before slicing. **if you don’t allow to cool, it wil fall apart! be patient :)
